My Kitchen Today: The Red Velvet Cake!!

   Sometimes, we think some dishes require high level of professionalism but that is not always true and this is just one of them.    The Red Velvet Cake  has an outstanding flavor  and a texture  worth writing  about. It is dense and soft with a moist and velvety crumb. The Red Velvet cake is incomplete without the Vanilla or creamy flavor. INGREDIENTS . 3 Cups of Flour . 3 Cups of Sugar . 3 Cups of Butter .     Rose Raponda (born 1964) is a Gabonese politician that  previously served as the Mayor of Libreville and later as the country's Defense Minister from February 2019 to July 2020. She is currently serving as the Prime Minister of Gabon since 16th of July 2020, making her the first female prime minister of the country.     Raponda was born in 1964 in Libreville as a member of the Mpongwe people. My Kitchen Today: Nigerian Egusi Soup

    Egusi Soup is also referred to as Melon soup. Egusi is the name for the fat and protein rich seeds of a certain Cucurbitaceous plants  that has been dried or grinded to serve as a soup ingredient.      It is a soup common amongst the igbo's, Ibibio's,Efik,Edo and Itsekiri people of Nigeria. I love this soup with different vegetables, let's go!     Ingredients ( For a family of 3). The Egusi will be in ball- like shape. . 4 Cups of Melon Seeds(Grinded or Milled) .7 teaspoons of blended onions . Fresh Chillies to taste . 1 cup of Palm oil . 2 teaspoons of Locust beans . Salt and Stock Cube to taste . The peaceful EndSars protest turned violent on Tuesday 20th of October causing an uproar in different parts of the nation particularly in Lagos State. In Lagos State, Governor Sanwo-Olu said there was no fatality recorded in the gunshot incident that occurred at the Lekki tollgate during the ENDSARS protest on Tuesday night. A report has it that about three buses were filled with armed thugs on the popular Ahmadu Bello Way.      Variety they say is the spice of life, Variety of food creates the excitement you seek for on the dining table hence we will be looking at how to prepare an indigenous food that is popular amongst the people of Anambra state of Nigeria called Ukwa.    Ukwa is known as African breadfruit, it is gotten from a specie of tree called Treculia Africana, it contains Omega-3And Omega 6 fatty acids which helps to build and maintain Collagen, this meal is beneficial to athletes, so I bet you would want to try it..   Ingredients for 2 servings . 500g of African bread fruit (Ukwa) . 6 pieces of dry fish .1 medium stock fish . Unfortunately, it is still our reality as women to face workplace challenges — lack of respect, overt and insidious sexual harassment, man-terruptions — simply because we are women.  Some fields are known to be male dominated businesses because they are majorly and traditionally controlled by the men. These fields are the Science, Technology, Economics and Mathematics. Women in these fields are regarded as odd people or people who have improperly earned their positions.    They go to work every day already saddled with the task of proving their worth and abilities — a weight their male colleagues do not bear. This is Ngozi Okonjo-Iweala. She is an economist and International development expert from Ogwashi-ukwu of Delta State,Nigeria. She was born on the 12th of June 1954 to a royal family. She is married to Dr. Ikemba Iweala, a Neuro-surgeon and they are blessed with four children. My kitchen Today: Chinese Fried Rice

   Thank God it is Friday (TGIF), we will finally have all the time for our love ones and one way to keep the bond is by cooking delicious meals.  The Chinese chicken fried rice is very simple and fast moreso cooking the Chinese Chicken fried rice is a great way of making use of leftover rice. This meal can also be substituted for brown rice.  Ingredients (for a family of four) . 2 cups of white rice( cold or left over) . 30cl of Olive Oil .3 pounds of chicken tenders or Chicken breast . 2 teaspoon of grinded ginger . 1 teaspoon of salt . 1 teaspoon of grinded pepper . 2 sweet bulb of Onions . 8 cloves garlic .6 eggs .10 table spoons of Soy sauce . 4 teaspoons of Sriracha .8 tablespoons of diced green onions Note:This meal is best prepared with cold or pre - cooked rice Also you can add more Sriracha if you want it hotter.        This is a meal originating from the Efik and Ibibio tribe of Nigeria,It is prepared majorly with Ugwu(Pumpkin leaves) and Malabar Spinach(Water leaf).The beauty of this soup is in its garnishing with the sea food delicacies.      This soup is one of my favorite dish because of it's savory taste.😋😋😋   Ingredients, for a family of four . 1 kg   of Pumpkin leaf (Ugwu . 500 g of Water leaf . 3 table spoon of grinded fresh Pepper or black pepper . 2 cups of palm oil . 2 handful of scent leaves( optional) . 1 kg of Assorted meat . 6 pieces of Ponmo . 1 cup of periwinkle .1 medium Onion .
