My Kitchen Today: UKWA (African Bread Fruits).

     Variety they say is the spice of life, Variety of food creates the excitement you seek for on the dining table hence we will be looking at how to prepare an indigenous food that is popular amongst the people of Anambra state of Nigeria called Ukwa.
   Ukwa is known as African breadfruit, it is gotten from a specie of tree called Treculia Africana, it contains Omega-3And Omega 6 fatty acids which helps to build and maintain Collagen, this meal is beneficial to athletes, so I bet you would want to try it..
  Ingredients for 2 servings
. 500g of African bread fruit (Ukwa)
. 6 pieces of dry fish
.1 medium stock fish
. A cube of Edible Potash
. 2 small stock cubes
. palm oil( a quantity enough to change the color of the dish to red when cooking
. 1 tablespoon of grinded Pepper
. 2 table spoon of crayfish
. 1 table spoon of grinded Ogiri
.2 pinch of salt to taste
. 2 small seasoning cube
   Note: If using dry Ukwa, it should be soaked overnight in plenty of cold water just before the day of preparation.
   Procedures
.Wash thoroughly the UKWA and put it in a sizeable pot, add water to pot that will be at least above the level of the Ukwa
. Add the edible potash,add the washed dry fish or stock fish, cover the pot and allow to cook till it is well cooked.
Note: The Ukwa Is ready if it melts when pressed also you can actually cook and spice up your fish exclusively.
.Add enough palm oil to the cooked Ukwa, add Ogiri, the grinded pepper, crayfish, stock cubes and salt to taste
. stir and add water if needed, cover and allow to cook under medium heat until the palm oil changes colour from red to yellow
. Wow! the Ukwa is ready in 20  minutes.

Domestic Voilence in Nigeria heightens in the face of economic hardship-majority of victims are women!

A recent Public Opinion poll conducted by NOIPolls Limited in partnership with Project Alert on domestic violence has revealed an increasing prevalence of domestic violence across Nigeria in recent times as reported by about 8 in 10 (78 percent) respondents. This prevalence is highest in the South-West geo-political zone (86 percent) and lowest in the South-South zone (70 percent). More findings revealed that 54 percent of Nigerians have suffered a form of domestic violence or know someone that has experienced domestic violence in their homes with majority of the victims being women as stated by 75 percent of respondents. Just this week, a man in Aba Abia state allegedly beat his wife into coma for lying to him that she has not been paid her salary after commissioner for finance Obinna Oriaku mis-informed the Abia public on radio that civil servants salary arrears have been paid.
