My Kitchen Today: Nigerian Egusi Soup

    Egusi Soup is also referred to as Melon soup. Egusi is the name for the fat and protein rich seeds of a certain Cucurbitaceous plants  that has been dried or grinded to serve as a soup ingredient.
     It is a soup common amongst the igbo's, Ibibio's,Efik,Edo and Itsekiri people of Nigeria. I love this soup with different vegetables, let's go!
    Ingredients ( For a family of 3). The Egusi will be in ball- like shape.
. 4 Cups of Melon Seeds(Grinded or Milled)
.7 teaspoons of blended onions
. Fresh Chillies to taste
. 1 cup of Palm oil
. 2 teaspoons of Locust beans
. Salt and Stock Cube to taste
. Grinded Crayfish
.7 small cups of Meat Stock
.Half- Cooked meat and Fish( I will be using goat meat and Shell fish)
.10-12 fingers of diced  Pumpkin leaf
. 6 fingers of diced Waterleaf 
. 4 fingers of diced Bitter leaf
. Blended fresh Pepper and tomatoes.
    Before cooking:  The leaves should be washed respectively and set aside. Also you should blend the Egusi seed into paste and mix with the blended onion mixture.
   Procedures
.  Add the Palm Oil to a dry pot and allow it to heat for few minutes then add the locust bean
. Reduce the heat and slowly add some portion of the blended pepper and tomato then add the meat stock, stir and allow to simmer
Note: Do not add too much of the stock because of the water leaf to avoid the flooding of the soup.
. Form a ball shape of the Egusi paste mixture and add it  intermittently into the stock. Be sure to maintain the ball shape
. Do not stir but leave to simmer for 20-30 minutes, So the balls cook through
. Add the meat and fish to the boiling soup together with the blended fresh Chille and the remaining blended pepper
. Add the diced and washed Waterleaf and allow to cook for 10minutes till it Will
.Add the bitter leaf, grinded Crayfish, salt and stock cube to taste
.Leave the Lid of the pot off and allow to cook for 5 minutes
.Add the Pumpkin leaf, stir, check the seasoning, adjust if needed and allow to cook for 7 minutes.
     Soup is ready 😋😋. It can be consumed with Fufu, Semovita and Pounded Yam. Enjoy!!
