My Kitchen today:Gbegiri soup( Bean Soup)

 This is a  Nigerian beans soup made with either black eyed or brown beans. Gbegiri soup is  easy to make and it is best enjoyed with either Tuwo Shinkafa or Amala and Ewedu soup.  Ingredients for 3 persons: .2 Cups of Black eyed or Brown Beans .3 Tablespoons of Palm Oil .2 Tablespoons of  Crayfish Powder .1 Tablespoon of  Locust Beans (Iru) .1-2 Tablespoons Ground Dried pepper (Atagungun) .1 Knorr Cube/ 2 seasoned cube .Salt to Taste . Meat, Fried fish( These are for servings)they are optional because the Gbegiri soup is usually not served alone, it can be served with stew containing assorted. Preparations: .Soak then peel your beans. It can be peeled  by hand or pulse in a jug blender. .Add the peeled beans into a pot,  Add water and cook under high heat till very soft and mushy. Woman Crush Sunday: Dr. Idiat Oluranti

Adebule was born November 27, 1970 to the family of Idowu-Esho of Ojo Alaworo in Ojo local government area of Lagos state. She is the 15th Deputy Governor of Lagos state and the sixth woman to occupy that office.Her term was not a long one as it lasted between May 29, 2015- May 28, 2019 but she can be regarded as a quiet influencer. During her tenure as the Deputy Governor, she did everything humanly possible to ensure the rescue of the victims of the 2017  Igbonla students abduction as she ensured security operatives stayed behind in the school to secure the students and teachers. My Kitchen Today: Ofe Owerri

  Ofe Owerri, is made up of two key words Ofe”  which means soup and “Owerri” which is the capital of Imo state. It is a  very popular traditional vegetable soup from the Igbo people of Eastern Nigeria particularly the people of Owerri, Imo state, Nigeria. It is usually prepared with four different vegetable leaves, Okazi, Ugu and Uziza or Oha, I will be using the Uziza leaves due to it's availability; dried leaves can be used when the fresh ones are unavailable.    Ikokore, also known as Ifokore is a Nigerian Pottage dish made with Water Yam . This delicious recipe originates from the Ijebu people of Ogun state, Nigeria.    Ingredients: . 5 seed of Shombo/Tatashe, alternatively 3 tbsp of Dry ground pepper (Atagungun) . 3 Tbsp of Scotch Bonnet (Ata Rodo) . 1-2 Smoked Fish (Eja Kika) .1-2 pieces of Shawa (Bonga fish) preferably  Shredded .Dried shredded Fish (Panla),optional  .1-2 pieces of Shredded cooked Meats (Shaki and Ponmo) . 2 cups of Crayfish .3 Tbsp of Smoked Prawns (Optional) .1/2 cups of Ogiri Ijebu (Fermented Locust Beans) . 1 Teaspoon of Knorr Chicken cubes i.e2 cubes  .Salt to taste Method .Slice your water yam into small pieces. My Kitchen Today: Ofe Achara

     Ofe Achara also called Akpuruakpu Egusi in igbo which means moulded egusi that should remain solid and intact by the time the soup is done such that the person enjoying the soup can bite into and chew them like meat. Traditonally this soup is prepared with dry fish and stock fish alone but you can use meat if you like.   Ingredients : .300g egusi (melon) seeds .40g ósú .1 handful of sliced okazi leaves .1 cup of broken pieces of 15 stalks of achara (Achara means the Elephant grass, the Asparagus leaf can be used alternatively) .2 cooking spoons of palm oil .3 pieces of stock fish . 1 dry cat fish  . 1 ogiri okpei   . 3 small stock cubes   . My Kitchen Today: Pasta Salad

    Thank God it is friday, a Good Friday , a day set aside annually to observe the commemoration of the Crucifixion of Jesus Christ. In honour of him, families can have a swell celebrating the victory he brings with this recipe.  Ingredients for (6) persons: .1 full pound of spiral pasta of different colors .Half cup of  salad seasoning mix .2 cups of diced cherry tomatoes .1 chopped green bell pepper,  .1 chopped red bell pepper . 1 chopped yellow bell pepper .1 cup of canned black olives, ( it should be chopped) . 1 cup of Italian Salad dressing( optionally our regular Salad cream can be used)     Note: The seasonings and ingredients  can be adjusted to number or health status.   Procedures: .In a large pot of salted boiling water, cook pasta until it is almost ready, rinse under cold water and drain. .
