My Kitchen today:Gbegiri soup( Bean Soup)

 This is a  Nigerian beans soup made with either black eyed or brown beans. Gbegiri soup is  easy to make and it is best enjoyed with either Tuwo Shinkafa or Amala and Ewedu soup. 
Ingredients for 3 persons:
.2 Cups of Black eyed or Brown Beans

.3 Tablespoons of Palm Oil

.2 Tablespoons of  Crayfish Powder

.1 Tablespoon of  Locust Beans (Iru)

.1-2 Tablespoons Ground Dried pepper (Atagungun)

.1 Knorr Cube/ 2 seasoned cube

.Salt to Taste
. Meat, Fried fish( These are for servings)they are optional because the Gbegiri soup is usually not served alone, it can be served with stew containing assorted.

Preparations:
.Soak then peel your beans. It can be peeled  by hand or pulse in a jug blender.
.Add the peeled beans into a pot,  Add water and cook under high heat till very soft and mushy. Be careful not to add too much water, preferably add water simultaneously as it gets cook until it gets soft. Do not add salt.
.When it is soft; Use an Ijabe (Ewedu broom) or a whisk to mash up the beans; better still you can blend till smooth to save time and energy, however you need to add half a cup of water to the beans before blending, 
Note: When using a blender, ensure the beans is not hot to avoid damaging your blender. 
.If you used an Ijabe( Ewedu broom) or a whisk to mash the beans,  sieve to remove clumps and get a really smooth consistency. 
.If you used a blender skip to the next process
.Put the blended bean back into the pot and cook on low heat
. Add a bit of water to the paste if too thick for your taste
. Add the palm oil, locust bean, crayfish powder, Seasoning cube, ground pepper and salt to taste
 Note: A little Palm oil is needed to slightly alter the colour of the paste
.Cook for 5-7 minutes, stir occasionally to prevent burning
.Gbegiri soup is ready when it thickens a bit and the palm oil is well combined with the paste
Note:  Gbegiri Soup thickens up really quickly, so do not be alarmed if it thickens up. Just add a bit of water and reheat.
. Gbegiri soup is served with the Fried fish and Meat on it with a touch of fried pepper stew...yummy!!!
