     Stella Chinyelu Okoli was born in Kano State in Northern Nigeria to Mr. Felix Ebelechukwu and Mrs Margaret Modebelu who are descents of Nnewi in Anambra State.She started her formal education in 1954 at All Saint Primary School in Onitsha before proceeding to complete her secondary school education in 1964 at Ogidi Girls Secondary School, Ogidi.     In 1969, Stella graduated from the University of Bradford as a Pharmacist.  Jollof rice is a dish made with rich tomato sauce, stock water amongst others. The orange colour it possesses and the smokey aroma is one of the unique qualities of this dish, I don't think there is a party in Nigeria without Jollof rice.  I have seen so many recipes for Jollof rice but I personally like the use of the leafy ingredients and other ingredients also used in fried rice. So, let's update our knowledge. Ofe Oha is also called Ofe Ora depending on the dialect, It originates from the South Eastern part of Nigeria. Oha soup is similar  to Ofe onugbu  or Banga soup in terms of preparations and in looks. So let's go INGREDIENTS FOR A FAMILY OF FOUR  *120g Oha leaves (shredded with your hands and washed) *Stockfish  * Beef *1 or 2 dry fish  *2 - 3 pieces of uziza leaves sliced and washed(optional) *Meat stock  *1/4 cup crayfish( coarsely grinded) *1-1/2 Tbsp ground Cameroon pepper ( alternatively use blended Habanero pepper) *1 to 2 Tbsp Ogiri Igbo * 1 cooking spoon of  mashed cocoyam *1 cup  of Palmoil * Salt to taste PROCEDURES * Wash and boil meat properly with adequate seasoning (do not cook for long, because it will be cooked again) * Keep the meat stock for further use  * Turn the meat stock to another pot for boiling, add the crayfish and Cameroon pepper to the boiling stock *Add in the palm oil and stir. * Add the Ogiri Igbo to...

 Esther Abaje is a 35 year old Nigerian-American, born in St. Paul, the state capital of Minnesota, to Rev. John, an Episcopal priest, and  mother, Bunmi, a librarian, who both met at the University of Minnesota where they were studying. My Kitchen Today: OGBONO SOUP

The Ogbono soup is alternatively called Draw soup, It is a Nigerian dish that originates from the Igbo tribe . This soup is made from ground dry Irvingia seed.The ground ogbono seeds are used as thickener, it also give the soup a black coloration.Ogbono soup has a mucilaginous (slimy) texture similar to okra soup. The beauty of this soup is it can be prepared with assorted, I like to add grated okra to my Ogbono soup to make it more slimy.. Let's go! INGREDIENTS:  Ogbono seeds Crayfish Fresh dry pepper(Habanero pepper) Grated Okro seed Salt Onion cubes Stock leaves (Uziza) Periwinkles (extracted) Palmoil Meat Stockfish BEFORE COOKING Before cooking, grind the Ogbono seed with crayfish Wash thoroughly the meat, the  stock fish and leaves respectively then set aside.
