My Kitchen Today: OGBONO SOUP

The Ogbono soup is alternatively called Draw soup, It is a Nigerian dish that originates from the Igbo tribe . This soup is made from ground dry Irvingia seed. The ground ogbono seeds are used as thickener, it also give the soup a black coloration.Ogbono soup has a mucilaginous (slimy) texture similar to okra soup. The beauty of this soup is it can be prepared with assorted, I like to add grated okra to my Ogbono soup to make it more slimy.. Let's go!
INGREDIENTS:
Ogbono seeds
Crayfish
Fresh dry pepper(Habanero pepper)
Grated Okro seed
Salt
Onion
cubes Stock
leaves (Uziza)
Periwinkles (extracted)
Palmoil
Meat
Stockfish
BEFORE COOKING
Before cooking, grind the Ogbono seed with crayfish
Wash thoroughly the meat, the  stock fish and leaves respectively then set aside. I will be using the boiling method because the  frying method reduces the slimy nature of this soup.
PROCEDURES
* Boil the meat for 10minute with onions, stock cube and salt, then add the stock fish afterwards and continue boiling.
* Pour the grinded seeds and crayfish to a stainless container containing some quantity of palm oil and put it on top of the boiling pot so as to melt the Ogbono seed, remove when in melted form. This should take 7 minutes
*Reduce the intensity of the heat and add the melted Ogbono seed to the stock, whisk it immediately so that it can permeate into the stock water
* After two minutes add the okra and the extracted periwinkles.
*Add the pepper, Maggi and salt again if needed, leave for 5mins
* Add the Utaisi leaves, stir the  ingredients together and taste it  to be sure the ingredients are in the right proportions
* Leave soup to boil for another (10) minutes..
ENSURE YOU KEEP THE POT OPEN AS SOON AS YOU ADD THE OGBONO SEED TO THE STOCK.
Ogbono soup can be eaten with Pounded Yam,Fufu, Wheat and so on. Research has it that the Ogbono soup contains Amino acids, magnesiums, Iron, Potassium. Bon Appetite!!
