My Kitchen Today: Party Jollof

 Jollof rice is a dish made with rich tomato sauce, stock water amongst others.
The orange colour it possesses and the smokey aroma is one of the unique qualities of this dish, I don't think there is a party in Nigeria without Jollof rice. 
I have seen so many recipes for Jollof rice but I personally like the use of the leafy ingredients and other ingredients also used in fried rice. So, let's update our knowledge.

INGREDIENTS( For a family of six)
*19 cups of Rice
*3 kg of Tomato paste
to taste
* Salt
* Chicken stock
* 6 cubes  of Maggi
* Bay leaves
*5 sachets of Curry
* 4 sachets of Thyme
* 12 White pepper
* 5 pieces of Ginger
* Ata  Rodo( Habanero pepper)
*6 pieces of Garlic
* 3 kg of Tatase(Bell pepper)
* 3 kg of Chicken
* 1 kg of spring onions
* 1 kg of green beans
* 1 kg of Carrots
PROCEDURES:
* Wash and perboil the rice to remove starch that can make it soggy
*Blend the  rodo,Tatase, onions, ginger and  garlic together, put enough ginger, until you can smell it in the mixture. Also ensure the grinded paste is thick, you can perboil the pepper mix to make it thick too
* Wash and dice the spring onions and carrots( Ensure you remove the fore skins and avoid dicing it too small)
* Wash and boil the chicken, drain the stock and set aside 
* Fry the chicken
*Pour oil in a pot, dice in some onions and fry till its saute, add the blended  pepper mix above and allow to fry well in the oil,you can add the stock water intermittently to avoid food  burnt
*Add seasoning cubes, curry, thyme and white pepper then Keep frying
* Add the diced spring onions , carrots and green beans, add a little water and allow to fry a little
*Check on the stew , by now it should have an orangy color instead of the red color,
*Wash the parboiled rice thoroughly and add to the frying stew, stir, add your chicken stock
Add little water, just enough to cover the rice; water should be added intermittently 
*Stir well and allow to cook
*Check again to adjust seasonings or taste.
* At this point, white pepper can be added
*Stir and cover with nylon so the rice can steam to perfection
* When cooked allow to steam
*Allow to  simmer for extra 10-15mins
* You can remove the rice from the pot into a spacious container to avoid Sogginess
* Serve the dished rice with the fried Chicken.
Food is ready😋😋!!
Note: At the point the rice begins to burn while cooking,  turn the heat low. Enjoy

Domestic Voilence in Nigeria heightens in the face of economic hardship-majority of victims are women!

A recent Public Opinion poll conducted by NOIPolls Limited in partnership with Project Alert on domestic violence has revealed an increasing prevalence of domestic violence across Nigeria in recent times as reported by about 8 in 10 (78 percent) respondents. This prevalence is highest in the South-West geo-political zone (86 percent) and lowest in the South-South zone (70 percent). More findings revealed that 54 percent of Nigerians have suffered a form of domestic violence or know someone that has experienced domestic violence in their homes with majority of the victims being women as stated by 75 percent of respondents. Just this week, a man in Aba Abia state allegedly beat his wife into coma for lying to him that she has not been paid her salary after commissioner for finance Obinna Oriaku mis-informed the Abia public on radio that civil servants salary arrears have been paid.
