My kitchen Today: Akara; a palatable dish.

    Akara is a popular meal that originates from West Africa and is popular amongst countries in West Africa,  this dish is made from peeled beans. I enjoy this dish with Akamu (pap) and white bread, yummy...

 Ingredients

. 2 cups of beans( white or brown) I prefer brown beans

. 6 seeds of Habanero Pepper and 4 seeds of Bell pepper

. 2 medium onions

. Shredded boiled fish or smoked fish( optional)

. Salt to taste

. Maggi

. Crayfish ( optional)

. Vegetable Oil for frying

 Note: you must use  coatless beans to avoid spattering

Equipment

. Blender/ Heavy duty grinders

. Sieve container

   Before Cooking

. Wash the beans thoroughly to make it coatless,while washing avoid it from coming in contact with Salt. This will prevent the spattering of the beans when frying

. Soak the beans in water for hours after washing it depending on the equipment to be used 

. Wash the pepper and onions and add it to the soaked beans

. Sliced another set of pepper and onions into desirable sizes

. Wash and shred the fish

    Procedure

. Grind the soaked beans with little water together with the Pepper and onion ( grind the beans into a paste form)

. Add plenty oil, at least 3 inches deep in  the frying pan

. Add the Maggi, salt, crayfish to taste and stir continuously in a circular manner until it gets whiter( add more water if too thick)

. When the oil is hot, add the shredded fish and sliced onions to the quantity to be fried at a go

. Scoop the mixture with a tablespoon and slowly pour it deeply into the hot oil to reduce spattering

. Fry the underside till it is brown and flip to fry the top side too

. Remove the Akara if it is brown all over into a sieve or paper towel

    Akara can be served with custard or ogi for breakfast, it can also be served with diluted garri or bread for lunch.

 The high composition of beans in Akara provides the body with antioxidants which is good for the waistline and helps in the prevention of diseases.
