My kitchen Today: Roasted Plantain and Potatoes with Ofada Stew Topping.

  Thank God it is another weekend, Valentine is almost here again, hurray 😁😁, it is another time to show love deliberately, it is important we give a special treat to our loved ones and meal time is the best time for family and loved ones  to bond together.
We will be trying this modernized traditional delicacy: Roasted Plantain and Potatoes with Ofada Stew as toppings.
We will start with the Ofada Sauce
Ofada Stew is the Yoruba version of Obe Dindin.
Now, there are two kinds of Ofada Stew, one is made with Green Bell Peppers while the other is made with Red Bell Peppers.
This version is made with Red Bell Peppers, let’s begin….
INGREDIENTS for a person of two
.700g Assorted Meats
.5 Bell Peppers (Tatashe)
.1 and half  Cups of Palm Oil
.2-3 Scotch Bonnet (Atarodo)
.1 big Onion or two small onions
.Boiled Eggs (Optional)
.2  Dried Fish or fresh fish (Shawa)
.2 Tablespoons of  Grinded Crayfish
.3 Tablespoons of Locust Beans (Iru)
.3 Knorr Chicken Cubes or any spicy cubes of your choice
.Salt to taste
PROCEDURES:
.First boil your meats with Onions, Garlic, Seasoning and Salt. When they’re soft,  cut the meats into a bite size.
.Add  the washed  fish to the almost boiled meat,
If you’re using an already dried fish like Shawa, soak in water and clean to remove dirt, then shred into a bite size  and set aside.
.Chop the Peppers and Onion, place on a roasting tray, roast for 40 minutes until it almost turns black. Also grill or fry the meats at the same time.
.When the pepper is properly roasted, grind with your blender a couple of times or you can use a grinding stone, and  set aside.
.Now, pour the oil into a saucepan, set on a low heat, heat it up till semi bleached then add half sliced Onion…
.Sauté till caramelised, this should take 12-15 minutes. Stir occasionally. Do not sauté on high heat, otherwise the onions will burn.
 (caramelising onions add loads of sweetness into your stew)
.Now add the Locust Beans (Iru), sauté for a minute, then add the Crayfish, sauté for another minute…
.Now, add the blended pepper, stir and combine, turn up the heat to medium…
.Leave to fry for 6-8 minutes, stir occasionally to prevent burning( you will need a lot of oil to achieve this)
.Now, add the grilled or fried meats and shredded fish, stir and combine
.Now add the boiled eggs if you’re using any
.  Stir and allow to simmer
    For the roasted potatoes and plantains
. A big bunch of Ripe plantains
. Three big potatoes
      When you add plantains and sweet potatoes in the oven, the hard part is over.
INSTRUCTIONS
.Preheat the oven to 425°
. Peel and finely dice the sweet potato 
.Transfer to a parchment-lined baking sheet
. Peel and slice the plantains; transfer to a second parchment-lined baking sheet
. Drizzle one tablespoon of oil over each sheet and season generously with kosher salt
. Toss the sweet potato and plantains in the oil to coat evenly
. Place the sweet potatoes on the bottom rack of the preheated oven and the plantains on the top rack
. Bake for 10 minutes or until the plantains and sweet potatoes turns brown
. Working one sheet at a time, use a spatula to flip over the plantains and sweet potatoes
. Bake for another 10 to 15 minutes, until the sweet potatoes can easily be pricked by fork and until the plantains turns golden brown
. Remove from the oven and set aside to cool.
   Serve your Roasted Plantain and Potatoes with the Ofada Stew as a topping. This meal can be served with a chilled natural drink, try pineapple and watermelon juice and thank me later.
