My Kitchen Today: Spiced chicken, spinach & sweet potato stew

  Knowing this Friday is Christmas gives me goose-bumps, everyone wants to impress his/her guest, so preparing  an unusual meal like this would definitely wow your guests;Spice Chicken Spinach and Potato Stew contains warm spices that have low fats, low calories and highly rich in fibre.
 Ingredients for 2 servings
*6 sweet potatoes ( This should be cut into chunks)
*2 Small bunch of spinach
*2 tbsp sunflower oil
*16 chicken thighs, (This should be shredded and grilled)
*1000ml size pot of chicken stock
The Spices to be used include:
*3 chopped onions
*2 diced red chilli
*2 tsp of grated Ginger
*2 Derica sized can tomatoes
*3 preserved lemons, *Deseeded and chopped Pumpkin seeds to serve
* 4 Toasted,preserved , deseeded and chopped Lemons
* 4 warmed naan bread
Procedures:
*Put the sweet potato in a large, deep saucepan over a high heat. Cover with boiling water and boil for 10 mins. While, it is boiling, put all the paste ingredients in a food processor and blend until it is finely blended then  Set aside 
*Put the spinach in a large colander in the sink and pour the  cooking water found in the boiled Potato over the spinach, to drain the potatoes and wilt the spinach at the same time then  Leave to steam-dry
* When cool, roughly chop the Spinach
*Put the saucepan on fire to heat  then add the sunflower oil after some minutes add the spice paste. Fry the paste for about 5 mins until thickened, then add the boneless chicken. Fry until the chicken changes colour
* Pour the fried paste over the stock and allow to  boil, leave to simmer for 10 mins while  stirring occasionally.
*Be sure the chicken is cooked by cutting into one of the thighs and making sure it’s white throughout with no signs of pink then Season with black pepper
* Add the sweet potato to the paste then  Leave to simmer for a  5 to 7 minutes.
 *Add the roughly chopped  spinach  to the stew. Make sure the stew is cooked already and not under heat
*Spread the pumpkin seeds and preserved lemons over the stew
* This dish can be served with warm naan bread on the side, Rice, Grilled flaky naan. Enjoy!!!
