MY KITCHEN TODAY: ORANGE JUICE

  Food does not exist only in solids but also in liquids,so we will be dealing with the orange juice; the making and the benefits. The Orange juice is a liquid extract from the orange tree fruit. The nutritional value  of a whole orange and it's juice is similar, they are excellent sources of vitamin C  which supports the immune system , they are also good sources of folate which helps reduce the risk of certain birth defects in pregnancy and the good thing is orange fruit juice can be properly done at home and preserved.

INGREDIENTS FOR TWO PERSONS:
*16 to 20 oranges (Big Size)
*1/4 tsp of  pink salt or kosher salt
*2 inch  of ginger piece
*16 to 20 mint leaves or holy basil leaves(optional)
*2 tbsp of organic honey (optional)
EQUIPMENTS:
* Blender alternativelyJuicer or Mixer
* Sieve

Note: This juice is not so good for people dealing with Ulcer or Diabetes

PROCEDURES
*  Wash the oranges very well
*Cut each orange into 2 halves horizontally.
*Remove and discard the seeds with a fork, the white membrane and the peels.
*Separate the orange pieces and add them to a mixer or blender then grind. If are using a juicer,peel the oranges and separate out the orange segments.
*Add a few orange segments at a time in the juicer.
*Add around 2 cups of water and blend till it is  smooth
* Peel rinse and diced  the  ginger into small bits and add to the blended orange paste and blend simultaneously
* If you are using the mint leaves, you will slice it smoothly and add it to the blended fruit ,blend until it slightly changes color
Note: Do not forget to add water intermittently as much as it needs but be careful not to over flood the drink
"Strain the orange juice using the sieve.
 *The pink salt can be added into  the sieved drink.
* The  served orange juice can be mix with the  organic honey .
* Serve the orange juice immediately or after refrigerating.
 To preserve your fruit juice for a longer period, add spices that are highly rich in Vitamin C, citric acid, malic acid, honey, essential oil and Vitamin E,  to  preserve the flavor and  prevent the browning of the refrigerated juice.

Domestic Voilence in Nigeria heightens in the face of economic hardship-majority of victims are women!

A recent Public Opinion poll conducted by NOIPolls Limited in partnership with Project Alert on domestic violence has revealed an increasing prevalence of domestic violence across Nigeria in recent times as reported by about 8 in 10 (78 percent) respondents. This prevalence is highest in the South-West geo-political zone (86 percent) and lowest in the South-South zone (70 percent). More findings revealed that 54 percent of Nigerians have suffered a form of domestic violence or know someone that has experienced domestic violence in their homes with majority of the victims being women as stated by 75 percent of respondents. Just this week, a man in Aba Abia state allegedly beat his wife into coma for lying to him that she has not been paid her salary after commissioner for finance Obinna Oriaku mis-informed the Abia public on radio that civil servants salary arrears have been paid.
