My Kitchen Today: African Coconut Rice.

     I have heard people say they are tired of rice, but here are ways you can cook your rice, one of such ways is cooking rice with Coconut flakes or coconut milk, which is called Coconut rice.
INGREDIENTS:
*3 cups long grain rice (feel free to substitute it with  brown rice)
*3 (15 ounce) can coconut milk or 2 large coconuts 
*1 (29 ounce) can diced tomatoes
*4  medium habanero peppers
*1  small green pepper (diced)
*1  small yellow onion (diced)
*1⁄4 cup  vegetable oil
*1  teaspoon sea salt
*1 teaspoon of black pepper
*5 green Chillies
*2 seasoning cubes
*1 tbsp. coconut oil
*1 clove garlic
*1 tsp. chopped ginger
*2 tsp. ground crayfish
*1 cup chicken stock
    I prefer the Coconut Rice having a semi green color to a brown color
Procedures:
*If you're using fresh coconuts, break it and separate the softer inner part from the hard shell using a small knife.
*Chop the coconuts into tiny bits and then put it in a blender with a few cups of warm water. Blend for about 6 min.
*Pour the contents of the blender into a small sieve and drain the milk. Apply pressure to make sure you squeeze all the milk out. You can add more warm water to the coconut shaft and drain again.
*Skip the first (3) process if you are not using fresh Coconut fruit
*Pre-cook the rice for about 10 minutes,then  sieve  into a bowl containing warm  water  and  Set aside.
* Chop the peppers and the onions into the same plate
*Blend the ginger and garlic and set aside in a different bowl
*Heat a pot and add coconut oil to bleach for some minutes
* Add the chopped onion, chopped pepper, the chillies and all the spices except the crayfish, ginger and garlic. 
* Fry for 6-8 minutes
*  Add your pre-made or can coconut milk, blended ginger and garlic, then add the  parboiled rice, and then add the chicken stock. 
*Cook for 15–20 min. Note: Make sure you have enough coconut milk, this should be the only water that should be added, so that you can add more to the rice if it dries out and still needs to be cooked.
*Once the rice is almost done, add the crayfish. Mix it together and allow to simmer.
* The diced tomatoes can be added to the dish rice.
Coconuts are especially high in manganese, which is essential for bone health and the metabolism of carbohydrates, proteins, and cholesterol . Enjoy!!
