My kitchen Today: Chinese Fried Rice

   Thank God it is Friday (TGIF), we will finally have all the time for our love ones and one way to keep the bond is by cooking delicious meals.
 The Chinese chicken fried rice is very simple and fast moreso cooking the Chinese Chicken fried rice is a great way of making use of leftover rice. This meal can also be substituted for brown rice.
 Ingredients (for a family of four)
. 2 cups of white rice( cold or left over)
. 30cl of Olive Oil
.3 pounds of chicken tenders or Chicken breast
. 2 teaspoon of grinded ginger
. 1 teaspoon of salt
. 1 teaspoon of grinded pepper
. 2 sweet bulb of Onions
. 8 cloves garlic
.6 eggs
.10 table spoons of Soy sauce
. 4 teaspoons of Sriracha
.8 tablespoons of diced green onions
Note:This meal is best prepared with cold or pre - cooked rice
Also you can add more Sriracha if you want it hotter.
PROCEDURE
. Heat a large Non- sticky pot over medium heat and add 20cl of Olive oil
. Dice chicken into bite-sized pieces, toss with ginger, salt and the grinded pepper
. Add to the pot and cook, stir continuously for 7 minutes until it turns brown. Remove the chicken into a plate and set aside
. Add another 5cl of the Olive oil into pot and stir with diced onion, garlic,peas and carrots. Cook for 7 minutes until onion is translucent and the other vegetables warm. Remove these into a plate too and set aside
. Add the remaining Olive Oil into the pan to heat a little
.Add the washed cold rice and stir to coat, stir occasionally for 5 minutes and push aside to the other side of the Pan
.Crack eggs into the empty section of the Pan and drizzle with 7 teaspoon of Soy sauce, scramble the eggs until it is done
. Stir the eggs into the rice mixture, return the chicken and the fried onion, garlic,peas and carrots to the pan,top with the remaining Soy sauce and Sriracha
.Stir well and allow to cook for 5_7 minutes more
. Remove from heat and sprinkle with green onions before serving.
 This meal is rich in vitamins and proteins with low cholesterol which helps the heart and skin. 
Take with chilled or creamy juice .Bon Appetite 😋😋

Domestic Voilence in Nigeria heightens in the face of economic hardship-majority of victims are women!

A recent Public Opinion poll conducted by NOIPolls Limited in partnership with Project Alert on domestic violence has revealed an increasing prevalence of domestic violence across Nigeria in recent times as reported by about 8 in 10 (78 percent) respondents. This prevalence is highest in the South-West geo-political zone (86 percent) and lowest in the South-South zone (70 percent). More findings revealed that 54 percent of Nigerians have suffered a form of domestic violence or know someone that has experienced domestic violence in their homes with majority of the victims being women as stated by 75 percent of respondents. Just this week, a man in Aba Abia state allegedly beat his wife into coma for lying to him that she has not been paid her salary after commissioner for finance Obinna Oriaku mis-informed the Abia public on radio that civil servants salary arrears have been paid.
